Recipes similar to this Ribatejo cake, which also goes by the name of Bolo Podre, are made all over the country. The Alentejo honey cake is famous for being moist and tasting heavily of olive oil. But which one? There are so many variations... It can contain cloves, lemon zest, milk, and far fewer eggs than this one. In older recipes, the eggs are beaten whole and the flour used was whole wheat. In Trás-os-Montes, walnuts are always part of the ingredients, and the version made with heather honey is especially appreciated. In Alentejo, it is customary to scatter whole almonds over the surface of the cake before it goes into the oven. Whether it features more eggs or more or less spices, the undeniable truth is that these high-quality ingredients characterize this magnificent family cake, which is indispensable at Christmas: olive oil and honey. Regarding the olive oil, one should prefer a markedly "sweet" extra virgin olive oil, such as certain olive oils from Northern Alentejo, Ribatejo, or Trás-os Montes.

THE RECIPE

  1. (For a 1.5-liter mold)
  2. 7 eggs
  3. 1 dl of mild extra virgin olive oil
  4. 2 dl of honey
  5. 100 g of sugar
  6. 1 tablespoon (level) of ground cinnamon
  7. 1 teaspoon of aniseed (erva-doce)
  8. 200 g of flour
  9. Olive oil for greasing the mold
  10. Coarse salt
  11. 125 g of salpicão (cured pork sausage)

Preparation

Grease the mold very well and place it in the refrigerator. Preheat the oven to 180 °C. Separate the egg yolks from the whites and beat the yolks with the extra virgin olive oil, honey, sugar, cinnamon, and aniseed until a very thick mixture is formed. Add the previously sifted flour and mix very well without beating. Separately, beat the egg whites with a few grains of coarse salt until they form stiff peaks, but no more. Gently fold these whites into the previous batter, using soft top-to-bottom cutting motions so as not to deflate the whites. Pour the batter into the mold and bake for about 40 to 45 minutes. Let the cake rest in the mold for 5 minutes before unmold. This cake keeps well for several days, or even a month, if kept in hermetically sealed tins.
